A story of family, culture, and transmission
The Pastaïolo is above all a family story. That of Georges Berra. Born in the French Alps, his roots run deep in Italy. Almost all of his family still lives over there, near Cuorgnè, north of Turin.
His parents arrived in France in 1969 to take over a shoe shop, and two years later, here he is born, somewhere between the mountains and Italy.
At home, they spoke Italian. They lived Italian, and they even spoke very loudly! He has always worked with Italian companies and has always loved that direct way of being, that warmth. So of course, creating a project related to Italy was a no-brainer !
Passionate about entrepreneurship, he wanted to imagine a concept capable of bringing a bit of that joy, that sweetness of Italian living onto our plates.
And what could be more universal, more simple, more loved than fresh pasta?
This is where Angelo comes in. They met around a pastificio near Savona, his hometown. They talked about the project over a Spritz.
He told him how, every Sunday morning, he would prepare fresh pasta with his family. And at that very moment, it was clear:
the Pastaïolo had just found his master of dough.
Today, here they are reunited in Chamonix.
Angelo with his gesture, Georges with his roots and energy. And with the same desire, that of bringing la dolce vita to the plates of Chamonix.

It all starts with a gesture
A simple gesture, repeated for generations, that of a hand rolling the dough, folding it, shaping it, almost caressing it. In Italy, for the nonna, it is a gesture of love. For us, it has become an art, and sometimes a sport, on days of high demand. The Pastaïolo is the one who perpetuates this gesture, who transforms three simple ingredients, flour, eggs, passion, into something incredibly alive and good.

From Italy to the heart of the Alps
In France, we love pasta, we eat it in all its forms, but we know too little about fresh pasta. The kind we take time to knead, which still breathes and cooks in 2 minutes. So, in Chamonix, just a stone's throw from Italy, we decided to recreate this connection between tradition and modernity. A place where we see, smell, and hear the pasta come to life. An open workshop, and a daily spectacle to spread al dente smiles! Here, flour flies, as do the laughter. And if you close your eyes for a second, you could almost hear a “Mamma mia!”
We speak Italian, but we cook local.
Our roots are Italian, but our ingredients come from here. Because between the Alps and the boot, there is the same love for quality products, the right gesture, and simple flavors. Here, the basil smells of the sun and the flour comes from the area. In short, we don't have mozzarella flown in by helicopter, we prefer to carry on the craftsmanship.

A good pasta is never eaten alone ! So here, we taste, we sort, we select.
Every product you find on our shelves has passed a rigorous casting: a passionate producer, a story, and that little something that makes the heart of the Pastaïolo flutter. Here, everything has been tested and approved by the Pastaïolo himself.
(Let’s just say we know someone who empties the jars a little too quickly.)
